Recipe Notes :
Ingredient Substitutions: If you can’t find shepherd’s purse, try using bok choy, spinach, or napa cabbage as green alternatives; firm tofu may also be used if soft tofu isn’t available.
Texture Variations: Soft tofu gives a silky mouthfeel, whereas firm tofu will create more bite. Likewise, cook the greens just till tender to retain a slight crisp.
Serving Suggestions: Serve hot with a drizzle of sesame oil and chopped green onions for freshness. Pair it with steamed rice or crusty bread to make it a fuller meal.
Storage Advice: Let the soup cool completely, then store in an airtight container in the fridge. Best consumed within 1-2 days. Reheat gently on the stove to preserve flavor and texture.
Additional Ingredient Options: For added depth, try stirring in mushrooms or sliced carrots. A dash of chili oil or a hint of soy sauce can also enhance the aroma and taste.
