  • Onion: 1 large, chopped
  • Garlic: 3-4 cloves, minced
  • Tomatoes: 4 large, chopped, or 1 can (14.5 ounces) of crushed tomatoes
  • Olive oil: 2-3 tablespoons
  • Red wine: 1/2 cup (optional, for added depth of flavor)
  • Oregano: 1 teaspoon (dried or fresh)
  • Paprika: 1 teaspoon
  • Salt: to taste
  • Black pepper: to taste
  • Bay leaves: 1-2 (optional)
  • Parsley: Fresh, chopped for garnish

How to make Spetsofai:

Prepare the Sausages: Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat.

Add the sausages and cook until they are browned on all sides. Remove the sausages from the skillet and set aside. Slice them into bite-sized pieces once they are cool enough to handle.
