For the Veg Tagine:

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 sweet potato, peeled and cubed
  • 1 cup pumpkin or butternut squash, cubed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup dried apricots, chopped
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1/2 tsp turmeric
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley or cilantro, chopped

For Garnish:

  • Fresh parsley or cilantro
  • Toasted almonds (optional)
  • Lemon wedges (optional)

How to Make Veg Tagine:

Sauté the Vegetables:
Heat olive oil in a large pot or tagine over medium heat. Add chopped onion and cook until soft. Stir in garlic and cook for another minute.

Cook the Vegetables:
Add carrots, sweet potato, zucchini, and pumpkin. Stir well and cook for 4–5 minutes.

Add the Spices:
Mix in cumin, coriander, paprika, cinnamon, turmeric, salt, and pepper. Stir until the vegetables are evenly coated with the fragrant spices.

Add Remaining Ingredients:
Pour in diced tomatoes and vegetable broth. Add chickpeas and chopped dried apricots. Stir everything together.

Cover the pot and cook on low heat for 30–35 minutes, or until the vegetables are tender and the sauce has thickened.

Taste and adjust the seasoning if needed. Stir in freshly chopped parsley or cilantro just before serving.
