Jersey Royal Traybake Ingredients:

  • 1 kg Jersey Royals (or other new potatoes, if unavailable)
  • 2 tbsp olive oil
  • 4 garlic cloves, smashed
  • 2 sprigs fresh rosemary, leaves removed and chopped
  • 1 lemon, zest and juice
  • Salt and freshly ground black pepper
  • Optional: A handful of fresh parsley, chopped (for garnish)

How to make Jersey Royal Traybake :

Preheat the Oven:Preheat your oven to 200°C (180°C fan) / 400°F / Gas Mark 6.

Prepare the Potatoes:Scrub the Jersey Royals thoroughly to remove any dirt (they don’t need peeling).
Cut the larger potatoes in half, leaving smaller ones whole, so they all cook evenly.

Toss with Seasoning:In a large bowl, combine the potatoes with olive oil, garlic, chopped rosemary, lemon zest, and lemon juice.

Season generously with salt and freshly ground black pepper, and toss everything together until the potatoes are evenly coated.

Roast:Spread the potatoes out in a single layer on a baking tray.

Roast in the preheated oven for 40–45 minutes, or until golden and crispy on the edges, and tender when pierced with a fork. Make sure to turn the potatoes halfway through cooking for even roasting.

Serve:Once roasted, remove the traybake from the oven and give it a final squeeze of fresh lemon juice for a burst of brightness.
