For the Salad:
- 2 medium potatoes, boiled, peeled, and diced
- 2 medium carrots, boiled and diced
- 1 cup green peas, boiled or thawed if frozen
- 2 eggs, hard-boiled and chopped
- 1 cup cooked chicken or ham, diced (optional)
- ½ cup pickles or gherkins, chopped
- ½ cup apple, peeled and finely chopped (optional, for a sweet twist)
For the Dressing:
- ¾ cup mayonnais
- 1 teaspoon Dijon mustard (optional)
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice or vinegar (optional for extra tang)
Prepare the Ingredients:
Boil potatoes, carrots, and peas until tender. Cool completely before dicing.
Hard-boil the eggs, peel, and chop them.
Combine the Salad:
In a large mixing bowl, add all chopped vegetables, eggs, pickles, and chicken or ham (if using).
Mix gently to combine.
Make the Dressing:
In a separate bowl, whisk together mayonnaise, mustard (if using), lemon juice, salt, and pepper.
Toss and Serve:
Pour the dressing over the salad mixture and fold everything together gently.
Chill in the refrigerator for 30 minutes or more before serving for best flavor.
