For the Taco Filling:
- 1 tablespoon olive oil
- 1/2 lb (225g) ground turkey
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1/4 cup tomato sauce or salsa
For the Bites:
- 20–24 mini phyllo shells or baked tortilla scoops
- 1/2 cup shredded cheddar or Mexican cheese blend
- 1/4 cup sour cream (for topping)
- Chopped green onions, cilantro, or jalapeños for garnish
Cook the Turkey:
Heat olive oil in a skillet over medium heat.
Add ground turkey and cook until browned, breaking it apart with a spoon.
Stir in chili powder, cumin, paprika, garlic powder, salt, and pepper.
Add tomato sauce or salsa and cook for another 2–3 minutes until thickened.
Remove from heat and let it cool slightly.
Assemble the Bites:
Preheat oven to 375°F (190°C).
Place mini phyllo shells or tortilla scoops on a baking sheet.
Spoon the turkey mixture into each shell.
Top each with a sprinkle of shredded cheese.
Bake:
Bake for 5–7 minutes, or until the cheese is melted and bubbly.
Remove from oven and cool slightly before topping.
Serve:
