For the Chicken Skewers:

  • 500g (1.1 lbs) boneless, skinless chicken thighs or breasts, cut into bite-sized cubes
  • 2 tbsp soy sauce
  • 2 tbsp mirin (or rice vinegar + 1 tsp sugar)
  • 1 tbsp sake (or dry sherry)
  • 1 tbsp brown sugar or honey
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp sesame oil
  • Bamboo skewers (soaked in water if wooden)

For the Miso Ranch Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp white miso paste
  • 1 tbsp rice vinegar or lemon juice
  • 1 garlic clove, minced
  • 1–2 tbsp chopped chives or green onions
  • Salt & pepper, to taste
  • Water or milk to thin (optional)

Optional Garnish:

  • Sesame seeds
  • Chopped green onions
  • Lime wedges

Marinate the Chicken:

In a bowl, mix soy sauce, mirin, sake, brown sugar, garlic, ginger, and sesame oil. Add chicken and toss to coat. Marinate for at least 30 minutes (up to overnight).

Make the Miso Ranch:

Whisk together mayo, sour cream, miso paste, vinegar, garlic, and chives. Add a splash of water/milk if too thick. Chill until serving.

Skewer and Grill:

Thread marinated chicken onto skewers. Preheat grill or grill pan over medium-high heat. Grill skewers for 5–6 minutes per side, basting occasionally with leftover marinade until cooked through and caramelized.

Serve:
