For the Turkey:

  • 1 whole turkey (10–14 lbs), thawed if frozen
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 tbsp olive oil
  • 1 tbsp fresh sage, chopped
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 onion, quartered
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 4 cloves garlic, smashed
  • 1 lemon, halved
  • 2 cups turkey or chicken broth
  • For the Gravy (optional):
  • Pan drippings
  • 2 tbsp flour
  • 1/2 cup broth or water (as needed)

Preheat & Prep:

1

Preheat oven to 325°F (165°C). Remove giblets from turkey cavity. Pat turkey dry with paper towels.

Season the Bird:

2

Mix softened butter, olive oil, herbs, salt, and pepper. Rub generously under the skin and over the entire turkey.

Stuff & Roast:

3

Stuff the cavity with lemon, onion, garlic, and some herbs. Place turkey on a rack in a roasting pan. Scatter carrots and celery around the pan. Pour broth into the bottom.

Roast:

4

Roast for ~15 minutes per pound, basting occasionally. Tent with foil if browning too quickly. Turkey is done when internal temp reaches 165°F (74°C) in the thickest part of the thigh.

Rest & Carve:

5

Let rest 20–30 minutes before carving.

Make Gravy (optional):

6

Pour drippings into a saucepan. Whisk in flour over medium heat until smooth. Add broth and cook until thickened.

Recipe Notes :

Butter Boost: For extra juicy turkey, rub butter under the skin—especially on the breasts.

No Roasting Rack? Use a bed of chopped veggies (onions, carrots, celery) to lift the bird.

Flavor Tip: Brine the turkey overnight in salted water with herbs for deeper flavor and moisture.

Serving Ideas: Classic mashed potatoes, green bean casserole, cranberry sauce, and buttery rolls make perfect sides.

Leftover Love: Use leftover meat for turkey pot pie, sandwiches, or a comforting turkey noodle soup.
