For the Roast Turkey
- 1 whole turkey (4–5 kg)
- 4 tbsp butter, softened
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme or rosemary
- 1 lemon, halved
- 1 onion, quartered
For the Gravy
- Pan drippings from roasted turkey
- 2 tbsp flour
- 2 cups chicken or turkey stock
- Salt and pepper to taste
Roast Turkey with Gravy Instructions:
Preheat oven to 180°C (350°F).
Pat turkey dry with paper towels.
Mix butter, olive oil, garlic, salt, pepper, paprika, and herbs.
Rub seasoning mixture all over the turkey and under the skin.
Stuff cavity with lemon and onion.
Place turkey on roasting rack breast-side up.
Roast uncovered, basting occasionally.
Cover loosely with foil if skin browns too fast.
Roast until internal temperature reaches 75°C (165°F).
Rest turkey for 20 minutes before carving.
Transfer pan drippings to a saucepan.
Add flour and whisk over medium heat.
Gradually add stock while whisking.
Cook until thick and smooth.
Season with salt and pepper.
