  • 4 large egg yolks
  • 4 tablespoons sugar
  • 2 cups heavy cream
  • 8 ounces bittersweet chocolate, melted
  • 1 teaspoon vanilla extract

Prepare and chill the chocolate mixture: In a medium saucepan, whisk together egg yolks, 2 tablespoons of sugar, and 3/4 cup of heavy cream. Cook over medium-low heat, stirring constantly, until the mixture coats the back of a spoon, about 3 to 4 minutes (do not let it boil). Remove from heat; whisk in melted chocolate and vanilla extract. Strain the mixture into a bowl and chill until cool.

Whip the cream and fold into the mousse: Using an electric mixer, beat the remaining 1 1/4 cups of heavy cream with the remaining 2 tablespoons of sugar until stiff peaks form. Stir 1/3 of the whipped cream into the cooled chocolate custard mixture, then gently fold in the remaining whipped cream using a rubber spatula.

Chill the mousse: Spoon the mixture into serving dishes and chill, covered, for at least 30 minutes and up to 3 days. Bring to room temperature before serving.
