Ingredients:

  • 2 Bell Peppers (Halved And Deseeded)
  • 2 Tomatoes (Hollowed)
  • 1 Zucchini (Cut Into Halves)
  • 1 Eggplant (Small, Halved)
  • 1 Cup Boiled Potatoes (Mashed)
  • 1/2 Cup Paneer (Crumbled)
  • 1 Small Onion (Finely Chopped)
  • 1 Tsp Ginger-Garlic Paste
  • 1 Tsp Cumin Powder
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp Garam Masala
  • 1/2 Tsp Red Chili Powder
  • 2 Tbsp Oil
  • Salt To Taste
  • Fresh Coriander Leaves (Chopped)

Instructions:

Prepare Vegetables By Cutting And Scooping Out The Centers.

Heat Oil In A Pan And Sauté Onions Until Golden.

Add Ginger-Garlic Paste And Cook For A Minute.

Add Mashed Potatoes, Paneer, And All Spices; Mix Well.

Cook The Filling For 3–4 Minutes And Add Fresh Coriander.

Stuff The Prepared Vegetables With The Mixture.

Place Stuffed Vegetables In A Greased Baking Dish.

Bake In A Preheated Oven At 180°C (350°F) For 25–30 Minutes Until Tender.

Do Not Overcook Vegetables To Maintain Shape.

You Can Add Cooked Rice Or Lentils To The Filling.
