Easy Mexican Street Corn Ingredients :
- 4 ears of corn
- 1/4 cup Mexican Crema Agria Sour Cream (regular sour cream can be substituted)
- 1/4 cup mayonnaise
- 1/2 cup crumbled Cotija cheese
- 2 cloves garlic, crushed or finely minced
- 1/4 teaspoon fine sea salt
- Juice and zest of 1 lime
- 1/4 cup finely chopped cilantro
- 1/2 teaspoon chipotle chili powder
How to Make Easy Mexican Street Corn:
Preheat your grill to around 400 degrees F.
Decide whether to grill the corn with or without the husks. Removing the husks allows for nice grill marks and enhances the grilled flavor. If grilling with husks, soak the corn in water for 10 minutes beforehand. If grilling without husks, lightly coat each cob with cooking spray.
Place the corn directly on the grill and cook for approximately 12 minutes, turning the cobs a quarter turn every 3 minutes.
Prepare the topping sauce by combining Cacique® Crema Mexican Agria Sour Cream, mayonnaise, cotija cheese, garlic, lime zest, lime juice, and cilantro.
