Sausage and Pinto Bean Soup Ingredients :

  • 1 lb (450g) sausage (pork, chicken, or a plant-based alternative), sliced or crumbled
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, sliced
  • 1 celery stalk, diced
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin

  • 2 cups fresh spinach or kale (optional)
  • Fresh parsley for garnish (optional)

Cook the Sausage:

1

Heat olive oil in a large pot or Dutch oven over medium heat.

2

Add the sausage and cook until browned and cooked through, about 5-7 minutes. Remove sausage from the pot and set aside.

Sauté the Vegetables:

3

In the same pot, add the diced onion, garlic, bell pepper, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

Combine Ingredients:

Return the cooked sausage to the pot.

5

Stir in the pinto beans, diced tomatoes, vegetable or chicken broth, smoked paprika, oregano, and cumin.

6

Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes, allowing the flavors to meld.

Add Greens (Optional):

7

Stir in the fresh spinach or kale if using, and cook for an additional 2-3 minutes until wilted.

Season and Serve:

8

Taste and adjust seasoning with salt and black pepper as needed.

9

Garnish with fresh parsley if desired.

10

Serve hot and enjoy!

Recipe Notes:

  • Sausage Options: Choose your sausage’s spice level—mild, spicy or smoked—for different flavor profiles. Plant-based sausage works if you want vegetarian variation.

  • Bean Variations: Swap in black beans or kidney beans if pinto beans are unavailable or for a different bean texture.

  • Simmer Time & Texture: Let the soup simmer long enough so the flavours meld fully, but avoid overcooking the beans so they hold shape.

  • Greens Addition: Stir in fresh spinach, kale or arugula at the end to brighten the dish and add color.

  • Storage & Reheating: Store in an airtight container in the fridge for up to 4 days. Freeze portions for up to 3 months. Reheat gently to avoid scorching.
