Cold Asparagus Soup Ingredients:
- 1 lb (450g) fresh asparagus, trimmed and cut into 1-inch pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 4 cups vegetable or chicken broth
- 1/2 cup dry white wine (optional)
- 1/2 cup plain Greek yogurt or sour cream
- 1 tbsp fresh lemon juice
- Salt and pepper to taste
- Fresh herbs for garnish (e.g., dill, chives, or parsley)
Sauté Vegetables:
In a large pot, heat the olive oil over medium heat.
