- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice (optional)
- 1/2 cup vegetable or chicken broth
- 2 tablespoons olive oil
Prepare the Ingredients:
Slice the Cabbage: Remove the outer leaves of the cabbage, cut it in half, and slice it into thin strips.
Prepare the Sausage:
Slice the Onion and Apple: Thinly slice the onion and core and slice the apple.
Sauté in the Instant Pot:
Heat Oil: Set your Instant Pot to the “Sauté” function. Add the olive oil and let it heat for a minute.
Cook Onion: Add the sliced onion and sauté for about 3-4 minutes until it starts to soften.
Add Apple: Stir in the apple slices and cook for another 2 minutes until they begin to soften.
Combine the Ingredients:
Add Cabbage: Add the sliced red cabbage to the pot, mixing it with the onions and apples.
Add Seasonings: Pour in the apple cider vinegar, brown sugar, salt, pepper, cinnamon, allspice (if using), and broth. Stir to combine.
Pressure Cook:
Seal the Instant Pot: Close the lid and ensure the valve is set to “Sealing.”
Set Cooking Time: Select the “Pressure Cook” or “Manual” function and set the timer for 10 minutes.
Natural Release: Once cooking is complete, allow for a natural pressure release for about 10 minutes, then switch to quick release to release any remaining pressure.
Serve:
Taste and Adjust: Carefully open the lid and stir the cabbage. Taste and adjust the seasoning if needed.
Plate: Serve warm as a side dish to complement your main course.
Recipe Notes:
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Reheat on the stovetop or in the microwave.
