Bacon Mango Fried Rice Ingredients
- 5 strips of thick-cut bacon, or 8-10 regular strips, sliced into 1/2-inch pieces
- 1 mango, peeled and diced
- 4 cups of cooked white rice (preferably day-old)
- Chives for garnish (optional, but add a nice touch)
How To Make Bacon Mango Fried Rice :
Heat a large non-stick skillet over medium heat. Add chopped bacon and sauté until nearly crisp, about 5-6 minutes. Remove excess fat, leaving approximately 1 1/2 to 2 tablespoons in the pan.
Add diced mango to the skillet and sauté for 2-3 minutes over medium heat until caramelized.
Stir in day-old rice until thoroughly combined and cook for about 2 minutes until heated through. Serve, optionally garnished with green onion.
Recipe Note :
For optimal results, use refrigerated day-old rice. Fresh rice tends to become sticky when fried, which affects the dish’s texture and flavor negatively. To cook rice, we recommend using a rice maker with the following proportions: 2 cups of rice, 2 1/2 cups of water, 2 tablespoons of butter, and 1 teaspoon of salt.
