Beef and Broccoli Udon Noodles Ingredients:

  • 200g (7 oz) flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 2 tbsp vegetable oil (divided)
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 2 packs fresh or frozen udon noodles (approx. 400g / 14 oz)
  • 1/4 cup water (for steaming broccoli)

For the Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp ground white pepper (or black pepper)

Optional Garnish:

  • Sesame seeds
  • Sliced green onions

Marinate the Beef:

In a bowl, combine sliced beef with 1 tbsp soy sauce and 1 tsp cornstarch. Let it marinate while preparing other ingredients.

Make the Sauce:

In a small bowl, whisk together all sauce ingredients and set aside.

Cook the Udon:

If using frozen udon, run under hot water or boil for 1 minute to loosen. Drain and set aside.

Stir-Fry the Beef:

Heat 1 tbsp oil in a large pan or wok over high heat. Add the marinated beef and stir-fry for 2–3 minutes until browned. Remove from the pan and set aside.

Cook Broccoli:

Add the remaining 1 tbsp oil, garlic, and broccoli. Stir-fry for 1–2 minutes. Add 1/4 cup water, cover, and steam for 2 minutes until bright green and just tender.

Combine Everything:

Add the noodles to the pan with broccoli, pour in the sauce, and toss well to coat. Return the beef to the pan and stir-fry everything together for 2–3 minutes until heated through.

Serve:

Plate hot, and top with sesame seeds and green onions if desired.
