Beef Stroganoff Ingredients:

  • 2 pounds of beef chuck roast
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 ounces of butter
  • 4 green onions, sliced (white parts only)
  • 4 tablespoons of all-purpose flour
  • 1 (10.5 ounce) can of condensed beef broth
  • 1 teaspoon of prepared mustard
  • 1 (6 ounce) can of sliced mushrooms, drained
  • ½ cup of sour cream
  • ½ cup of white wine
  • Salt and ground black pepper, to taste

How To Make Beef Stroganoff

1

Trim any fat and gristle from the chuck roast and cut it into strips measuring 1/2-inch thick by 2 inches long. Season the strips with ½ teaspoon of salt and ½ teaspoon of pepper.

2

In a large skillet over medium heat, melt the butter. Add the beef and quickly brown it.

3

Push the beef to one side of the skillet. Add the onions and cook and stir them for 3 to 5 minutes, then push them to the side with the beef.

4

Stir the flour into the juices on the empty side of the pan. Pour in the beef broth and bring it to a boil, stirring constantly. Reduce the heat and stir in the mustard. Cover and simmer for 1 hour or until the beef is tender.

5

Five minutes before serving, stir in the mushrooms, sour cream, and white wine. Cook until heated through. Season with salt and pepper.

6

Serve the beef stroganoff over noodles.

Recipe Notes

Beef Cuts: For the best results, use tender cuts like sirloin or tenderloin. If using tougher cuts, consider marinating them for a few hours to enhance tenderness.

Sour Cream Alternatives: If sour cream isn’t available, Greek yogurt can be used as a substitute, though it may slightly alter the flavor profile.

Storage Instructions: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat to prevent the sauce from separating.

Serving Suggestions: This dish pairs wonderfully with steamed vegetables or a crisp green salad to balance the richness of the sauce.

Freezing Tips: While the beef stroganoff can be frozen, the sour cream may cause the sauce to separate upon reheating. To mitigate this, consider freezing the beef and sauce separately from the sour cream, adding the sour cream during the reheating process.
