Besan Burfi Ingredients:
- 2 cups besan (gram flour)
- ½ cup ghee
- ¾ cup sugar
- ¼ cup water
- ½ teaspoon cardamom powder
- 2 tablespoons chopped almonds or pistachios (optional)
- A pinch of saffron strands (optional)
Roast the Besan:
Heat ghee in a pan over low to medium heat.
Add besan and roast, stirring continuously, until it turns golden brown and aromatic (about 10–12 minutes).
Stir in cardamom powder and mix well.
Prepare the Sugar Syrup:
In a separate pan, combine sugar and water.
Heat until the sugar dissolves and forms a 1-string consistency syrup (test by pressing a drop between your fingers—it should form a thin thread).
Combine and Set:
Gradually add the sugar syrup to the roasted besan, stirring continuously.
Mix well until the mixture thickens and starts to leave the sides of the pan.
Transfer the mixture to a greased tray or plate.
Sprinkle chopped nuts and saffron strands on top (if using).
Let it cool for 30 minutes, then cut into squares or diamond shapes.
