For the Noodles:
- 2 cups all-purpose flour
- 3/4 cup water
- 1/2 tsp salt
- Oil for coating
For the Topping & Sauce:
- 3 tbsp chili flakes
- 3 cloves garlic, minced
- 1 tsp Sichuan pepper powder
- 2 tbsp soy sauce
- 1 tbsp Chinese black vinegar
- 2 tbsp neutral oil
- Spring onions, chopped
- Optional vegetables or braised meat
Biang Biang Noodles Instructions:
Mix flour, salt, and water to form a dough.
Knead until smooth and let rest for at least 15 minutes.
Divide dough into strips and coat lightly with oil.
Stretch each strip into long, wide belt-like noodles.
Boil noodles in salted water until cooked and chewy.
Place chili flakes, garlic, and spices over the noodles.
Heat oil until very hot.
Pour hot oil over toppings to release aroma.
Add soy sauce and black vinegar.
Toss well and garnish with spring onions.
