For the Chicken
- 4 boneless, skin-on chicken thighs (or boneless chicken breasts)
- 1 tablespoon vegetable oil
For the Miso Marinade
- 3 tablespoons white miso paste
- 2 tablespoons mirin
- 1 tablespoon soy sauce
- 1 tablespoon sake (optional)
- 1 tablespoon honey or sugar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger

- 2 green onions, thinly sliced

Prepare the Marinade
In a medium bowl, whisk together the miso paste, mirin, soy sauce, sake (if using), honey, sesame oil, garlic, and ginger until smooth.
Marinate the Chicken
Pat the chicken dry with paper towels.
Coat each piece evenly with the miso marinade.
Cover and refrigerate for at least 1 hour, preferably 4–8 hours for deeper flavor.
Prepare for Broiling
Preheat the broiler on high.
Line a baking tray with aluminum foil and lightly grease it.
Arrange the chicken skin-side up, allowing excess marinade to drip off.
Broil the Chicken
Place the tray about 5–6 inches (13–15 cm) below the broiler.
Broil for 8–10 minutes.
Turn the chicken over and broil for another 5–7 minutes.
Flip once more so the skin faces up and broil for 2–4 minutes until caramelized and lightly charred.
Ensure the internal temperature reaches 165°F (74°C).
Rest and Serve
Let the chicken rest for 5 minutes.
Sprinkle with sesame seeds and sliced green onions.
