Brussels Sprouts Soup Recipe Ingredients:
- 1 lb Brussels sprouts, trimmed and halved
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Vegetable broth (or chicken broth)
- 1/2 cup Cream or milk (optional, for creaminess)
- Salt and pepper, to taste
- 1/4 teaspoon Nutmeg (optional, for extra flavor)
- Fresh herbs (optional, for garnish, like parsley or thyme)
Prepare the Brussels sprouts:
Trim the ends and cut the Brussels sprouts in half. Set aside.
Cook the veggies:
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 5-7 minutes until the onions are soft and translucent.
Add Brussels sprouts:
