Carrot Ragout Ingredients:
- 1 lb (450 g) carrots, peeled and sliced
- 2 tbsp butter
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 cup vegetable or chicken broth
- 1/4 cup heavy cream
- Salt and pepper, to taste
- 1 tsp fresh thyme or parsley, chopped
Cook the Onion and Garlic:
Melt butter in a pan over medium heat.
Sauté the onion and garlic until soft and fragrant.
Add the Carrots:
Add sliced carrots to the pan. Stir to coat them in the butter.
Simmer:
Pour in the broth. Cover and simmer for 10–15 minutes until the carrots are tender.
Add Cream:
Stir in the cream and season with salt and pepper. Simmer for 2–3 more minutes to thicken slightly.
Garnish and Serve:
