Ingredients:
- 2 Cups Pre-Cooked Cornmeal (Arepa Flour)
- 2 1/2 Cups Warm Water
- 1/2 Tsp Salt
- 2 Cups Cooked Chicken, Shredded
- 1 Avocado, Mashed
- 2 Tbsp Mayonnaise
- 1 Tbsp Lime Juice
- 2 Tbsp Onion, Finely Chopped
- 1 Tbsp Fresh Cilantro, Chopped
- 1 Tbsp Oil (For Cooking)
Instructions:
In A Bowl, Mix Cornmeal, Warm Water, And Salt To Form A Soft Dough.
Divide The Dough Into Portions And Shape Into Thick Round Patties.
Heat Oil In A Pan And Cook The Arepas Until Golden On Both Sides.
Transfer To A Plate And Let Them Cool Slightly.
In Another Bowl, Mix Shredded Chicken, Mashed Avocado, Mayonnaise, Lime Juice, Onion, And Cilantro.
Slice Each Arepa Halfway Open To Form A Pocket.
