Chicken Tabaka (Pan-Fried Chicken) Ingredients:
- 1 whole small chicken (800–900g), butterflied
- 4–5 garlic cloves, crushed
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp chili flakes (optional)
- Salt to taste
- 2 tbsp butter
- 2 tbsp oil
- Fresh cilantro or parsley for garnish
Chicken Tabaka (Pan-Fried Chicken) Instructions:
Season the butterflied chicken with salt, pepper, paprika, garlic, and chili flakes.
Heat a large heavy pan and add butter + oil.
Place the chicken skin-side down, press with a heavy lid/weight, and cook 12–15 mins.
Flip the chicken and cook another 12–15 mins until fully cooked and crispy.
Remove from the pan, rest for a few minutes, and garnish with herbs.
Serve with potatoes, salad, or bread.
