Coconut Jelly Ingredients:
- 1 can (13.5 oz) coconut milk
- 1 cup coconut water
- 1/2 cup granulated sugar (adjust to taste)
- 2 tablespoons agar-agar powder (or 4 teaspoons agar-agar flakes)
- 1/2 teaspoon vanilla extract (optional)
- Fresh fruit or shredded coconut for garnish (optional)
How to make Coconut Jelly :
Prepare Agar-Agar: If using agar-agar flakes, dissolve them in 1/2 cup of water and let it sit for about 10 minutes. For agar-agar powder, skip this step.
Heat Mixture: In a medium saucepan, combine the coconut milk, coconut water, and sugar. Heat over medium heat, stirring until the sugar dissolves.
Add Agar-Agar: Add the dissolved agar-agar (if using flakes) or agar-agar powder directly to the saucepan. Bring the mixture to a boil, stirring continuously. Once it starts boiling, reduce the heat and simmer for about 2-3 minutes, or until the agar-agar is fully dissolved.
Flavor: If desired, stir in the vanilla extract.
Set: Pour the mixture into a mold or individual cups. Allow it to cool slightly before transferring to the refrigerator. Chill for at least 2 hours or until fully set.
Serve: Once set, garnish with fresh fruit or shredded coconut if desired. Serve chilled.
Recipe Notes:
Agar-Agar: Use agar-agar powder for a firmer set; adjust the quantity based on package instructions for desired firmness.
Sweetener: Adjust sugar to taste; some prefer a lightly sweetened jelly, while others enjoy a sweeter version.
Flavor Variations: Infuse the mixture with pandan leaves during heating for a traditional flavor, or add fruit pieces like mango or lychee for added texture and taste.
Serving Suggestions: Serve chilled as is, or with toppings like fresh fruits, coconut meat, or a drizzle of sweetened coconut milk.
Storage: Keep refrigerated in an airtight container for up to 3 days for optimal freshness.
Vegan-Friendly: This recipe is naturally vegan, making it suitable for a variety of dietary preferences.
