For the Turkey:
- 1 whole turkey (10–14 lbs), thawed if frozen
- 1/2 cup (1 stick) unsalted butter, softened
- 1 tbsp olive oil
- 1 tbsp fresh sage, chopped
- 1 tbsp fresh thyme leaves (or 1 tsp dried)
- 1 tbsp fresh rosemary, chopped
- 1 tbsp salt
- 1 tsp black pepper
- 1 onion, quartered
- 2 celery stalks, chopped
- 2 carrots, chopped
- 4 cloves garlic, smashed
- 1 lemon, halved
- 2 cups turkey or chicken broth
- For the Gravy (optional):
- Pan drippings
- 2 tbsp flour
- 1/2 cup broth or water (as needed)
Preheat & Prep:
Preheat oven to 325°F (165°C). Remove giblets from turkey cavity. Pat turkey dry with paper towels.
Season the Bird:
Mix softened butter, olive oil, herbs, salt, and pepper. Rub generously under the skin and over the entire turkey.
Stuff & Roast:
Stuff the cavity with lemon, onion, garlic, and some herbs. Place turkey on a rack in a roasting pan. Scatter carrots and celery around the pan. Pour broth into the bottom.
Roast:
Roast for ~15 minutes per pound, basting occasionally. Tent with foil if browning too quickly. Turkey is done when internal temp reaches 165°F (74°C) in the thickest part of the thigh.
Rest & Carve:
Let rest 20–30 minutes before carving.
Make Gravy (optional):
Pour drippings into a saucepan. Whisk in flour over medium heat until smooth. Add broth and cook until thickened.
Recipe Notes :
Butter Boost: For extra juicy turkey, rub softened butter under the skin—especially on the breast.
No Roasting Rack? Use a bed of chopped veggies (carrots, celery, onions) to lift the turkey for even cooking.
Flavor Tip: Brine the turkey overnight in salted water with herbs for enhanced moisture and flavor.
Serving Ideas: Serve with mashed potatoes, green bean casserole, cranberry sauce, or buttery rolls for a complete meal.
Leftover Love: Transform leftover turkey into pot pies, sandwiches, or comforting turkey noodle soup.
