Lentil and Vegetable Stew Ingredients:
- 1 cup lentils (red or brown), rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 potato, diced
- 1 tomato, chopped or 1/2 cup canned tomatoes
- 2 tbsp olive oil
- 4 cups vegetable stock or water
- 1 tsp cumin powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- Salt to taste
- Fresh parsley or coriander for garnish
- Crusty bread, for serving
Lentil and Vegetable Stew Instructions:
Heat olive oil in a large pot over medium heat.
Sauté onion until soft and translucent.
Add garlic and cook until fragrant.
Add carrot, potato, and tomato; cook for a few minutes.
Stir in lentils, cumin, paprika, salt, and pepper.
Pour in vegetable stock or water.
Bring to a boil, then reduce heat and simmer uncovered.
Cook for 35–40 minutes until lentils and vegetables are tender.
