For the Filling:
- 500g (1 lb) ground beef or minced steak
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon all-purpose flour
- 1 cup beef stock
- ½ teaspoon thyme or mixed herbs
- Salt and pepper, to taste
For the Cob:
- 1 large round cob loaf (unsliced)
- ½–1 cup shredded cheddar cheese (optional)
- 1 egg, beaten (for egg wash)
Prepare the Cob:
Preheat oven to 180°C (350°F).
Slice off the top of the cob loaf and hollow out the center, leaving a thick shell.
Reserve the bread pieces for dipping or discard.
Make the Meat Filling:
In a pan, heat olive oil over medium heat.
Add onion and garlic, cook until softened.
Add the ground beef, breaking it up and cooking until browned.
Stir in tomato paste, Worcestershire sauce, and flour. Cook for 1–2 minutes.
Pour in the beef stock and add herbs, simmer until thickened (about 10 minutes).
Season with salt and pepper to taste.
Assemble:
Spoon the meat mixture into the hollowed-out cob.
Sprinkle with cheese if using.
Brush the cob lid and sides with beaten egg for shine.
Bake:
Place on a baking tray and bake for 15–20 minutes, or until the cob is golden and the filling is bubbling.
Serve:
Let cool slightly before slicing.
Serve with a green salad, chips, or roasted vegetables.
Recipe Notes:
Bread Cob: Choose a round, crusty bread loaf that is firm enough to hold the meat filling without becoming soggy.
Meat Filling: Cook the meat until it is well browned and flavorful. Allow the filling to thicken slightly so it stays inside the bread cob.
Bread Center: Carefully remove the soft center of the cob, leaving a thick outer shell to maintain its shape.
Cheese Topping: Sprinkle grated cheese over the filling for a delicious golden and melted topping.
Serving: Serve the Meat Pie in a Cob while warm for the best combination of crispy bread, savory filling, and melted cheese.
