Olivie (Russian Potato Salad) Ingredients :

  • 2 large potatoes, peeled and thinly sliced
  • 3 carrots, peeled and thinly sliced
  • 1 (15 ounce) can sweet peas, drained
  • Chopped dill pickles, to taste
  • Finely chopped onion
  • Chopped bologna slices (optional)
  • 2 hard-boiled eggs, chopped
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • ½ teaspoon salt
  • Ground black pepper, to taste

How To Make Olivie (Russian Potato Salad) :

Place the potatoes and carrots in a large pot and cover them with salted water. Bring to a boil, then reduce the heat to medium-low and simmer until tender, about 15 minutes. Drain and rinse with cold water until they are completely cooled. Dice the potatoes and carrots.

In a large bowl, combine the diced potatoes and carrots with the sweet peas, chopped pickles, onion, bologna (if using), and chopped eggs. Gently stir in the mayonnaise, sour cream, salt, and black pepper until everything is well mixed. Cover the bowl with plastic wrap and refrigerate until cold, for at least 30 minutes.
