Russian Salad, also known as Olivier Salad, is a creamy, colorful, and hearty dish made with boiled vegetables, eggs, and mayonnaise. For the Salad:

  • 2 medium potatoes, boiled, peeled, and diced
  • 2 medium carrots, boiled and diced
  • 1 cup green peas, boiled or thawed if frozen
  • 2 eggs, hard-boiled and chopped
  • 1 cup cooked chicken or ham, diced (optional)
  • ½ cup pickles or gherkins, chopped
  • ½ cup apple, peeled and finely chopped (optional, for a sweet twist)

For the Dressing:

  • ¾ cup mayonnais
  • 1 teaspoon Dijon mustard (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon lemon juice or vinegar (optional for extra tang)

Prepare the Ingredients:

Boil potatoes, carrots, and peas until tender. Cool completely before dicing.

Hard-boil the eggs, peel, and chop them.

Combine the Salad:

In a large mixing bowl, add all chopped vegetables, eggs, pickles, and chicken or ham (if using).
