  • 2 cloves garlic, minced
  • 2 tbsp breadcrumbs
  • 1 egg
  • 1 tbsp parsley, chopped
  • ½ tsp smoked paprika
  • Salt and pepper to taste

For the Stew:

  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 1 potato, diced
  • 1 cup tomato sauce or crushed tomatoes
  • 1½ cups chicken or beef broth
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt and pepper to taste
  • 1 bay leaf

Optional:

  • Peas or bell peppers
  • Fresh parsley for garnish

Spanish Meatball Stew Instructions:

Mix beef/pork with onion, garlic, breadcrumbs, egg, parsley, paprika, salt, and pepper.

Shape into small meatballs.

Heat oil in a pot and brown the meatballs lightly; remove and set aside.

Add carrot, potato, paprika, cumin, and bay leaf; cook for 1 minute.
