- 400 g boneless chicken breast or thigh, sliced
- 1/2 cup cashew nuts (lightly roasted)
- 2 tbsp vegetable oil
- 1 small onion, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 tsp ginger, minced (optional)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp cornstarch mixed with 2 tbsp water
- 1/2 tsp black pepper
- 1/4 tsp red chili flakes (optional)
- Spring onions for garnish
Stir-Fried Chicken with Cashew Nuts Instructions:
Heat oil in a wok or pan over high heat.
Add chicken and stir-fry until lightly browned and cooked through.
Remove chicken and set aside.
In the same pan, sauté garlic and ginger until fragrant.
Add onion and bell pepper; stir-fry briefly.
Return chicken to the pan.
Add soy sauce, oyster sauce, black pepper, and chili flakes.
Stir in cornstarch slurry to thicken the sauce.
