Brussels Sprouts Soup Recipe Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable broth (or chicken broth)
  • 1/2 cup Cream or milk (optional, for creaminess)
  • Salt and pepper, to taste
  • 1/4 teaspoon Nutmeg (optional, for extra flavor)
  • Fresh herbs (optional, for garnish, like parsley or thyme)

Prepare the Brussels sprouts:

1

Trim the ends and cut the Brussels sprouts in half. Set aside.

Cook the veggies:

2

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 5-7 minutes until the onions are soft and translucent.

Add Brussels sprouts:

3

Add the Brussels sprouts to the pot and cook for about 5 minutes, stirring occasionally.

Add broth:

4

Pour in the vegetable broth (or chicken broth) and bring it to a simmer. Let it cook for about 15-20 minutes until the Brussels sprouts are tender.

Blend the soup:

5

Use an immersion blender to blend the soup directly in the pot until smooth. Alternatively, you can carefully transfer the soup in batches to a blender. If you want a creamier texture, add cream or milk and blend again.

Season:

6

Taste the soup and add salt, pepper, and a pinch of nutmeg if desired.

Serve:

7

Ladle the soup into bowls and garnish with fresh herbs if you like. Serve hot and enjoy!

Recipe Notes:

If you prefer a chunkier soup, blend only part of the soup, leaving some Brussels sprouts whole for texture.

For a vegan version, use plant-based cream or simply skip the cream.

You can add other vegetables like potatoes or leeks for additional flavor.
