For the Maibowle:
- 1 bunch of fresh sweet woodruff (about 10–15 sprigs), wilted overnight
- 1 bottle (750 ml) dry white wine (e.g., Riesling or Sauvignon Blanc)
- 1 bottle (750 ml) sparkling wine (e.g., Sekt or Champagne), chilled
- 2 tablespoons sugar (adjust to taste)
- 1 lemon, sliced
- 1/2 cup fresh strawberries or raspberries (optional, for garnish)
- Ice cubes (optional)
Prepare the Woodruff:
Harvest or purchase fresh sweet woodruff.
Rinse and pat dry.
Let it wilt overnight (12–24 hours). This intensifies its aroma and makes it safe for consumption.
Infuse the White Wine:
In a large bowl or jug, combine the white wine with the wilted woodruff and lemon slices.
Stir in the sugar until dissolved.
Cover and refrigerate for 1–2 hours to let the flavors infuse.
After infusing, remove the woodruff to prevent bitterness.
Finish the Punch:
Just before serving, add the chilled sparkling wine to the infused white wine mixture.
Gently stir to combine.
Serve:
Pour the Green Maibowle into glasses or a punch bowl.

Recipe Notes :
Woodruff : Only use wilted woodruff, not fresh, as fresh contains a compound (coumarin) that is safe only in small quantities when wilted.
Chill Time : Allowing the woodruff to steep for too long can result in bitterness, so stick to the recommended time.
Non-Alcoholic Version : Substitute white wine with white grape juice and sparkling wine with sparkling water or lemon soda.
