Alfajores Recipe – Spanish Special

For the Dough:
- 1 cup ground almonds
- 1/2 cup honey
- 1/2 cup all-purpose flour
- 1/4 cup powdered sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- Zest of 1 orange (optional, for added flavor)
For Rolling/Finishing:
- Powdered sugar (for dusting)
- Sesame seeds (optional)
Prepare the Dough:
In a mixing bowl, combine the ground almonds, flour, powdered sugar, cinnamon, cloves, nutmeg, and orange zest.
Gradually add the honey and mix until a soft, pliable dough forms.
You can knead gently with your hands for better texture.
Wrap the dough in plastic wrap and refrigerate for 20–30 minutes to firm it up.
Shape and Bake:
Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Roll the dough to about 1/2 inch (1.2 cm) thick and cut into small discs or oblong shapes.
Place the pieces on the baking sheet and, if using, sprinkle sesame seeds on top.
Bake for 10–12 minutes, or until lightly golden.
Do not overbake — they should remain soft.
Let them cool completely on a wire rack.
Finish and Serve:
Dust the cooled Alfajores generously with powdered sugar.
Arrange them on a serving platter for a festive presentation.
Serve with tea or Spanish coffee for a classic experience.
