For the Churros:
- 1 cup (240ml) water
- 2 tbsp sugar
- 2 tbsp unsalted butter
- 1/2 tsp salt
- 1 cup (125g) all-purpose flour
- 2 large eggs
- 1/2 tsp vanilla extract
- Vegetable oil (for frying)
- 1/2 cup sugar + 1 tsp cinnamon (for coating)
For the Chocolate Sauce:
- 100g (3.5 oz) dark chocolate (60–70% cocoa)
- 1 cup (240ml) whole milk
- 1 tsp cornstarch (for thickening)
- 1–2 tbsp sugar (to taste)
- Pinch of salt
Make the Churro Dough:
In a saucepan, bring water, sugar, butter, and salt to a boil.
Add flour all at once, stirring vigorously until a smooth dough forms and pulls away from the sides.
Remove from heat and cool for 5–10 minutes.
Add eggs one at a time, beating well after each addition, until glossy and pipeable.
Stir in vanilla.
Fry the Churros:
Heat oil in a deep pan to 180°C (350°F).
Transfer dough to a piping bag fitted with a star tip.
Pipe 4–5 inch strips into the hot oil (use scissors to cut the dough).
Fry until golden brown, 2–3 minutes per side.
Drain on paper towels, then roll in cinnamon sugar.
Make the Chocolate Sauce:
In a saucepan, combine milk and cornstarch. Stir until smooth.
Heat gently, then add chocolate, sugar, and salt.
Stir until thick, smooth, and glossy.
Serve warm in a cup or bowl alongside churros.

Egg-Free Version: Traditional Spanish churros sometimes skip eggs—feel free to omit them for a simpler dough.
Thicker Sauce: Use less milk or more cornstarch for a denser dip, like Spanish chocolate a la taza.
