Shrimp Fajitas Recipe – Mexican Special

Shrimp Fajitas are bursting with flavor and incredibly simple to make! This one-skillet recipe features plump, juicy shrimp, tender charred vegetables, and a delightful fajita marinade.

Fajita Marinade Ingredients:

  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 Tbsp lime juice, from 1/2 lime
  • 1 Tbsp cajun spice
  • 1/2 tsp salt

Shrimp Fajita Ingredients

  • 1 lb large shrimp, peeled, deveined
  • 2 bell peppers, (any color) sliced
  • 1/2 medium onion, sliced
  • 1/4 cup cilantro, chopped
  • 2-3 tsp lime juice , (from 1/2 lime)

To serve

Preparing the spices

In a small bowl, combine the marinade ingredients: 1/4 cup olive oil, 4 cloves minced garlic, 1 tablespoon lime juice (from half a lime), 1 tablespoon Cajun spice, and 1/2 teaspoon salt.

Slice bell peppers and onions into uniform 1/3-inch thickness and place them in a medium bowl. Pour half of the marinade over the vegetables and toss to coat evenly.

In another medium bowl, pat dry the shrimp with paper towels. Add the remaining marinade to the shrimp and stir until well coated.

Heat a large, heavy pan over medium heat with 1/2 tablespoon of oil. Once hot, add the shrimp in a single layer and sauté for 1-2 minutes per side, until cooked through and no longer translucent. Transfer the cooked shrimp promptly to a plate.

Using the same pan, add the marinated vegetables and sauté until they are soft and have golden brown edges, about 10 minutes, stirring occasionally. Turn off the heat.

Return the cooked shrimp to the pan and add 1/4 cup chopped cilantro. Squeeze fresh lime juice to taste over the mixture and toss everything together to combine.

Serve the fajitas with warmed or toasted tortillas and jalapeno ranch or your preferred sauce.

Recipe Notes:

To Warm Tortillas: Wrap a stack of 5 tortillas in a damp paper towel and microwave them in 30-second intervals until they are warm.

To Toast Tortillas: Place each tortilla individually on a hot, dry skillet, griddle, low gas flame, or grill and cook for about 15 seconds per side until lightly browned.
