Kare Raisu Ingredients:
- 500g (1 lb) chicken, beef, or pork, cut into bite-sized pieces
- 2 medium potatoes, peeled and cubed
- 2 medium carrots, peeled and sliced
- 1 large onion, sliced
- 2 tbsp vegetable oil
- 4 cups water or chicken/vegetable stock
- 100g Japanese curry roux (store-bought or homemade)
- Salt and pepper, to taste
- Steamed Japanese short-grain rice, for serving
Kare Raisu Instructions:
Heat oil in a large pot; sauté onions until soft and translucent.
Add meat pieces; cook until lightly browned on all sides.
Add carrots and potatoes; stir briefly.
Pour in water or stock and bring to a boil. Reduce heat and simmer until meat and vegetables are tender (15–20 minutes).
Break curry roux into pieces and stir into the pot; simmer until sauce thickens and coats the ingredients.
Season with salt and pepper to taste.
Serve curry hot over steamed rice.

Curry Roux Options: Use store-bought blocks (mild, medium, or hot) or prepare a homemade roux with butter, flour, and curry powder.
