- 600 g (1.3 lbs) pork loin, sliced into medallions
- 100 g Spanish chorizo, sliced
- 2 tbsp olive oil
- 1 large onion, finely sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 ripe tomatoes, grated or finely chopped
- 1/2 cup white wine
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Lomo a la Riojana Instructions:
Season pork loin slices with salt and pepper.
