Mexican Lasagna Ingredients:

  • 2 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 500 g ground beef or chicken (or black beans for vegetarian)
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • 1 cup corn kernels
  • 1 cup black beans, cooked
  • 2 cups tomato sauce or salsa
  • 8–10 tortillas (corn or flour)
  • 2 cups shredded cheese (cheddar, mozzarella, or Mexican blend)
  • Fresh cilantro for garnish

Mexican Lasagna Instructions:

Preheat the oven to 180°C (350°F).

Heat oil in a pan and sauté onion until soft.

Add garlic and cook until fragrant.

Add ground meat and cook until browned.

Stir in cumin, chili powder, paprika, oregano, salt, and pepper.

Add corn, black beans, and tomato sauce or salsa.
