Sweet Bean Filled Pancakes Ingredients
Pancake Batter
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 3/4 cup milk
- 1 tbsp melted butter or oil
- 1/2 tsp vanilla extract (optional)
Filling
- 1/2 cup sweet red bean paste (anko)
Sweet Bean Filled Pancakes Instructions
In a bowl, whisk flour, sugar, baking powder, and salt.
Add egg, milk, melted butter, and vanilla. Mix until smooth.
Heat a non-stick pan over medium heat and lightly grease it.
Pour a small ladle of batter onto the pan.
Spoon a small amount of sweet bean paste into the center.
Cover with a little more batter to seal the filling.
Cook until bubbles form, then flip gently.
Cook until both sides are golden and pancake is cooked through.
Remove and repeat with remaining batter.
