Bacon Mango Fried Rice Ingredients
- 5 strips of thick-cut bacon, or 8-10 regular strips, sliced into 1/2-inch pieces
- 1 mango, peeled and diced
- 4 cups of cooked white rice (preferably day-old)
- Chives for garnish (optional, but add a nice touch)
How To Make Bacon Mango Fried Rice :
Heat a large non-stick skillet over medium heat. Add chopped bacon and sauté until nearly crisp, about 5-6 minutes. Remove excess fat, leaving approximately 1 1/2 to 2 tablespoons in the pan.
Add diced mango to the skillet and sauté for 2-3 minutes over medium heat until caramelized.
Stir in day-old rice until thoroughly combined and cook for about 2 minutes until heated through. Serve, optionally garnished with green onion.
Recipe Note :
Use day-old (refrigerated) rice—this helps prevent clumping and gives the best texture when frying.
Caramelize the mango in the rendered bacon fat (with about 1½–2 tablespoons leftover) to enhance the natural sweetness and depth.
Cook bacon until nearly crisp (about 5–6 minutes), remove excess fat but leave some for flavor and proper mango sauté.
Sauté the mango for 2–3 minutes until golden and caramelized before stirring in the rice—this ensures the flavors meld beautifully.
Garnish with chives or green onions if desired—for a fresh, crisp finish.
