- 3 zucchinis, peeled
- 2 large eggs
- 6 tablespoons all-purpose flour
- 4 green onions, chopped
- 3/4 cup fresh dill, chopped
- 1/2 cup parsley, chopped
- 1/2 teaspoon Aleppo pepper
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 6 tablespoons olive oil, divided
How to Make Turkish Zucchini Fritters
Grate the zucchinis into a large bowl and firmly squeeze out excess liquid. Discard the liquid.
Combine the squeezed zucchinis with eggs, flour, green onions, dill, and parsley.
Mix in the spices until well incorporated.
Heat 2 tablespoons of olive oil in a pan over medium heat. Spoon 2 tablespoons of the batter into the pan and fry for approximately 5 minutes on one side. Flip and fry for 3 minutes on the other side.
