Russian Syrniki Ingredients :

  • 1 lb farmer’s cheese (refer to notes before beginning)
  • 2 eggs
  • ½ cup + ½ cup all-purpose flour, divided (adjust as necessary; see notes)
  • ¼ cup sugar
  • ¼ teaspoon salt
  • Optional: ½ cup raisins
  • 3-4 tablespoons vegetable oil for frying

How To Make Russian Syrniki:

Prepare the batter: In a large bowl, crumble the farmer’s cheese into small pieces using a fork. Ensure to strain it beforehand if your farmer’s cheese isn’t crumbly (refer to notes). Add 2 eggs and mix thoroughly. Incorporate ½ cup of flour (keep ⅓ cup reserved for the next step), sugar, and salt. Mix well with the fork, breaking any clumps of flour or cheese. Add raisins if desired. The batter will be thick like dough rather than traditional pancake batter.

Form the syrniki pancakes: Set up a small bowl with about ⅓ cup of flour for dredging the pancakes. Scoop approximately ¼ cup of pancake dough at a time (refer to recipe notes below). Gently flatten the dough into small patties with your hands. Dredge each pancake in flour on both sides, shaking off any excess flour. Set aside until ready to cook.

Cook the syrniki pancakes: Heat 3-4 tablespoons of vegetable oil in a large skillet. Carefully place the flour-dredged cheese pancakes into the pan using a spatula. Cook over medium-low heat for about 4-5 minutes per side, or until each side turns golden brown. Transfer cooked pancakes to a paper towel-lined plate to cool. Avoid crowding the pan; cook in batches if necessary.
