Riz Bi Haleeb Ingredients:
- 1 cup short-grain or arborio rice
- 2 1/2 cups almond milk (or any other plant-based milk)
- 1/2 cup coconut milk (for extra creaminess)
- 1/2 cup granulated sugar (or coconut sugar for a healthier option)
- 1/4 cup maple syrup or agave nectar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon ground nutmeg (optional)
- Fresh fruit, nuts, or dried fruit for topping (optional)
Cook the Rice:
In a medium saucepan, combine the rice and 2 1/2 cups of almond milk. Bring to a boil over medium-high heat.
Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and most of the liquid is absorbed. Stir occasionally.
Add Sweeteners and Creaminess:
Once the rice is cooked, stir in the coconut milk, sugar, maple syrup (or agave nectar), and salt. Cook over low heat, stirring frequently, for another 5-10 minutes, or until the pudding has thickened and is creamy.
Flavor the Pudding:
Remove from heat and stir in the vanilla extract. Add ground cinnamon and nutmeg if desired. Mix well.
Cool and Serve:
Allow the pudding to cool slightly before serving. It can be enjoyed warm or chilled. If serving chilled, cover and refrigerate for at least 2 hours before eating.
Garnish:
Top with fresh fruit, nuts, or dried fruit of your choice before serving, if desired.
Recipe Notes:
Choose the best rice variety: short-grain or arborio rice yields the creamiest consistency; long-grain works in a pinch but needs more stirring.
Adjust sweetness to taste—maple syrup or agave can substitute sugar, and you can reduce or increase sweetener depending on preference.
For ideal texture, let the pudding cool & reheating gradually; if it thickens too much in the fridge, stir in a splash more almond milk when warming.
Toppings ideas: fresh fruit, toasted nuts, or dried fruit add contrast in texture and flavor—try sliced berries, pistachios, or cherries.
Storage tips: keep leftovers sealed in an airtight container in the refrigerator for up to 5 days. Before serving again, stir well as the pudding may firm up once chilled.
