How to make Mediterranean Jerk Chicken :
Prepare the Marinade:In a bowl, whisk together olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper.
Marinate the Chicken:Add the chicken cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
Assemble the Skewers:If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Thread the marinated chicken and any optional vegetables onto the skewers, alternating between chicken and vegetables.
Preheat the Grill:Preheat your grill to medium-high heat.
Grill the Skewers:Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
Serve:Remove from the grill and let rest for a few minutes. Serve with a side of tzatziki sauce, hummus, or your favorite dip.
Recipe Notes:
Marinade Timing: For best flavor, marinate chicken for at least 30 minutes but up to 4 hours in advance. The lemon juice and spices deeply penetrate the meat, improving tenderness.
Skewer Prep: If using wooden skewers, soak in water before threading to prevent burning. Alternate chicken and vegetables like bell peppers, onions, zucchini for even cooking and appealing color.
Grilling Tips: Grill over medium-high heat until chicken reaches an internal temperature of 165 °F (75 °C). Turning occasionally ensures even char and prevents drying.
Vegetable Variation: Feel free to swap in mushrooms, eggplant, or yellow squash instead of zucchini. Use whatever fresh vegetables you have for flavor and nutrients.
Serving & Storage: Serve immediately with your favorite dip such as tzatziki, hummus, or a light yogurt sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days, reheating gently to retain juiciness.
