For the Accordion Potatoes:
- 4 medium-sized russet potatoes (or any preferred variety)
- 1/4 cup olive oil (or melted butter)
- 2-3 cloves garlic, minced
- 1 teaspoon dried rosemary (or other herbs like thyme)
- Salt and pepper to taste
- Grated cheese (cheddar, Parmesan, or your favorite) for topping (optional)

How to make Accordion Potatoes :
Preheat the Oven:Preheat your oven to 425°F (220°C).
Prepare the Potatoes:Wash and dry the potatoes. Slice them thinly (about 1/8 inch) without cutting all the way through, leaving the bottom intact. You can place chopsticks on either side of the potato to help prevent cutting all the way through.
Season:In a small bowl, mix olive oil, minced garlic, dried rosemary, salt, and pepper. Brush this mixture over the potatoes, making sure it seeps into the slices.
Bake:Place the potatoes on a baking sheet lined with parchment paper. Bake for about 45-50 minutes, or until the potatoes are tender and the edges are crispy.
