For the Accordion Potatoes:

  • 4 medium-sized russet potatoes (or any preferred variety)
  • 1/4 cup olive oil (or melted butter)
  • 2-3 cloves garlic, minced
  • 1 teaspoon dried rosemary (or other herbs like thyme)
  • Salt and pepper to taste
  • Grated cheese (cheddar, Parmesan, or your favorite) for topping (optional)
  • Fresh herbs for garnish (optional)

How to make Accordion Potatoes :

1

Preheat the Oven:Preheat your oven to 425°F (220°C).

2

Prepare the Potatoes:Wash and dry the potatoes. Slice them thinly (about 1/8 inch) without cutting all the way through, leaving the bottom intact. You can place chopsticks on either side of the potato to help prevent cutting all the way through.

3

Season:In a small bowl, mix olive oil, minced garlic, dried rosemary, salt, and pepper. Brush this mixture over the potatoes, making sure it seeps into the slices.

4

Bake:Place the potatoes on a baking sheet lined with parchment paper. Bake for about 45-50 minutes, or until the potatoes are tender and the edges are crispy.

5

Add Cheese:If using cheese, sprinkle it on top of the potatoes in the last 10 minutes of baking, allowing it to melt and become golden.

6

Serve:Remove from the oven, garnish with fresh herbs if desired, and serve warm.

Recipe Notes :

Potato Variety: Feel free to use any variety of potatoes you like. Russets or Yukon golds work best for a fluffy texture.

Flavor Variations: Add spices like paprika or cayenne pepper to the oil mixture for an extra kick.

Toppings: You can customize with toppings like crispy bacon bits, chives, or green onions for added flavor.

Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven to retain crispiness.
