For the Accordion Potatoes:

  • 4 medium-sized russet potatoes (or any preferred variety)
  • 1/4 cup olive oil (or melted butter)
  • 2-3 cloves garlic, minced
  • 1 teaspoon dried rosemary (or other herbs like thyme)
  • Salt and pepper to taste
  • Grated cheese (cheddar, Parmesan, or your favorite) for topping (optional)

How to make Accordion Potatoes :

Preheat the Oven:Preheat your oven to 425°F (220°C).

Prepare the Potatoes:Wash and dry the potatoes. Slice them thinly (about 1/8 inch) without cutting all the way through, leaving the bottom intact. You can place chopsticks on either side of the potato to help prevent cutting all the way through.
