Accordion Potatoes Recipe – American Special

Accordion Potatoes are a visually stunning and delicious side dish that elevate ordinary potatoes into something special. Thinly sliced (without cutting all the way through) and fanned out, each potato is brushed with a fragrant blend of garlic, rosemary, olive oil, salt, and pepper so every fold captures flavor. Baked until the edges crisp and the interior becomes tender, these potatoes make a perfect accompaniment for family dinner or a festive table.

For the Accordion Potatoes:
- 4 medium-sized russet potatoes (or any preferred variety)
- 1/4 cup olive oil (or melted butter)
- 2-3 cloves garlic, minced
- 1 teaspoon dried rosemary (or other herbs like thyme)
- Salt and pepper to taste
- Grated cheese (cheddar, Parmesan, or your favorite) for topping (optional)
- Fresh herbs for garnish (optional)
How to make Accordion Potatoes :
Preheat the Oven:Preheat your oven to 425°F (220°C).
Prepare the Potatoes:Wash and dry the potatoes. Slice them thinly (about 1/8 inch) without cutting all the way through, leaving the bottom intact. You can place chopsticks on either side of the potato to help prevent cutting all the way through.
Season:In a small bowl, mix olive oil, minced garlic, dried rosemary, salt, and pepper. Brush this mixture over the potatoes, making sure it seeps into the slices.
Bake:Place the potatoes on a baking sheet lined with parchment paper. Bake for about 45-50 minutes, or until the potatoes are tender and the edges are crispy.
Add Cheese:If using cheese, sprinkle it on top of the potatoes in the last 10 minutes of baking, allowing it to melt and become golden.
Serve:Remove from the oven, garnish with fresh herbs if desired, and serve warm.
Recipe Notes :
Potato Variety: Russet or Yukon Gold work best for a fluffy interior and crisp outer edges.
Cutting Tip: Place spoons or chopsticks alongside the potato when slicing to avoid cutting all the way through.
Flavor Variations: Add spices like paprika or cayenne, or brush with butter instead of olive oil for richer flavor.
Toppings: Enhance with cheese, crispy bacon bits, chives, or green onions for extra texture and taste.
Storage: Store leftovers in the fridge up to 3 days; reheat in the oven to maintain crispiness.
