Beef and Mushroom Stir Fry Ingredients:
- 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 2 cups mushrooms (shiitake, cremini, or button), sliced
- 2–3 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 2 green onions, chopped (for garnish)
- Sesame seeds (optional, for garnish)
For the Sauce:
- 3 tbsp soy sauce (low-sodium preferred)
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce (optional, for sweetness)
- 1 tbsp rice vinegar
- 1/2 tsp sesame oil
- 1 tsp Sugar or honey
- 2 tbsp water or beef broth
- 1/2 tsp chili flakes (optional, for heat)
Prep the Beef:
Toss sliced beef with cornstarch and a pinch of salt. Let sit for 5–10 minutes to tenderize and create a light crust when stir-fried.
Make the Sauce:
In a small bowl, whisk together all sauce ingredients until well combined. Set aside.
Stir Fry:
Heat oil in a large skillet or wok over high heat. Sear beef in a single layer until browned (about 2 minutes per side). Remove and set aside.
Cook Veggies:
Add a bit more oil if needed. Stir-fry garlic, ginger, and mushrooms until mushrooms are golden and tender.
Combine and Glaze:
Return beef to the pan. Pour in the sauce and toss everything together. Stir-fry for another 1–2 minutes until the sauce thickens and coats the beef and mushrooms.
Serve:
Garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or noodles.
Recipe Notes :
Beef Cut Tips: Flank or sirloin works best—slice thinly against the grain for tenderness.
Mushroom Variety: Use shiitake or oyster mushrooms for deeper flavor, or mix multiple types.
Sauce Adjustments: Add more hoisin for sweetness or chili paste for extra spice.
Vegetable Add-ins: Bell peppers, snap peas, or baby corn can be added for crunch and color.
Make Ahead: Marinate the beef and prep veggies ahead to speed up cooking on busy nights.
