Black Treacle Financiers Recipe – French Special

Black Treacle Financiers are a rich twist on the classic French almond tea cake. Traditionally made with browned butter, almond flour, and egg whites, these little cakes are light, moist, and packed with nutty flavor. The addition of black treacle lends a deep, slightly bitter sweetness that balances the richness beautifully—perfect with a cup of coffee or tea. Baked in small molds, they’re elegant, simple, and utterly irresistible.

Brown the Butter:
In a saucepan over medium heat, melt the butter and cook until it turns golden brown and smells nutty.
Remove from heat and set aside to cool slightly.
Mix Dry Ingredients:
In a large bowl, whisk together almond flour, all-purpose flour, powdered sugar, and salt.
Combine Wet Ingredients:
In a separate bowl, lightly whisk the egg whites until foamy (no need to whip to peaks).
Stir in the black treacle and vanilla extract.
Combine Everything:
Add the egg white mixture to the dry ingredients and stir to combine.
Slowly mix in the browned butter until fully incorporated and smooth.
Bake:
Preheat oven to 375°F (190°C).
Grease mini muffin pans or financier molds.
Spoon batter into molds, filling about 3/4 full.
Bake for 12–15 minutes or until golden around the edges and springy in the center.
Serve:
Allow financiers to cool in the molds for a few minutes, then turn out onto a wire rack to cool completely. Serve plain, or top with nuts or a dusting of powdered sugar.
Recipe Notes :
Treacle Swap : If black treacle is unavailable, use molasses (not blackstrap) for a similar flavor profile.
Browning Butter : Don’t skip this step—it adds incredible depth and nuttiness to the financiers.
Egg Whites : No whipping required—just lightly froth them for the right texture.
Storage : Store in an airtight container for up to 3 days or freeze for longer freshness.
Presentation : Bake in traditional financier molds for authenticity, or use mini muffin tins.
